On Wednesday, June 1, at 7pm, Russet Chef-owner Andrew Wood and sous chef Brandon Thomas will prepare a four-course dinner built around complimentary cocktails by local food and drink expert and author Tenaya Darlington. The dinner and complimentary cocktails are a celebration of her latest book called “The New Cocktail Hour” (Running Press).
From her “essential guide for hand-crafted drinks," Darlington will mix and serve one cocktail per course. Chefs Wood and Thomas will serve book dinner guests in Russet's Private Dining Room, located just behind its kitchen. This tucked-away, cozy spot also has a lovely outdoor terrace, where guests may mingle throughout the night.

7pm to 8pm
Cheese from Doe Run will be served along with other bites from the kitchen. Darlington will prepare a French 75 (gin, lemon, champagne)
Dinner will begin at 8pm
Amuse Bouche: Oyster with strawberry umebochi, lovage, sorrel
First course: Tangerine and walnut salumi, smoked rhubarb compote, brioche toast with Darlington’s Hemingway Daiquiri (white rum, maraschino liqueur, lime juice, grapefruit juice)
Second course: Pit-roasted Happy Valley Beef, pickled botanicals, sour cherries, stinging nettles, asparagus with Darlington’s Remember the Maine (rye, sweet vermouth, cherry heering, absinthe, cherry)
Dessert: Champagne au soyer, a champagne float with house-made ice cream (brandy, orange curacao, maraschino liqueur, ice cream, Champagne) - Photo attached by Jason Varney
